glucose to fructose will granulate/ crystallize faster. Different
flower nectars have different proportions of these sugars.
7.
Do certain types of Honey crystallize more readily than others?
Although most varieties of honey crystallize after extracting,
those that contain less glucose such as LONGAN FLOWER HONEY
resist granulation / crystallization.
